In this video, I’m making wild rose petal jam. More like a honey or a spread than a jam really, but it's delicious. Come see what I make with it in following videos! It’s part of my personal recipe book project, where I document things I actually make and love.
Wild Rose Petal Jam Recipe
Ingredients:
2 cups wild rose petals
1 cup white sugar
3 cups water
1 tbsp lemon juice
Instructions:
Layer wild rose petals and sugar in a lidded container.
Let sit for 1 to 2 days to marinate and draw out the flavour.
Pour the rose-sugar mixture into a saucepan and add the water.
Stir well and bring to a boil over medium-high heat.
Reduce heat and simmer until the petals turn translucent.
Test the consistency by placing a spoonful on a chilled plate.
If it wrinkles when pushed, the jam is set.
If it's too thick, add a little water and continue simmering.
Stir in the lemon juice to restore the bright pink color.
Remove from heat.
Pour the jam into sterilized canning jars, leaving 6 mm of headspace.
Process jars in a boiling water bath for 15 minutes.
