INGREDIENTS
For Marinating Chicken:
800 gms of curry cut chicken
1 tbsp. red chilli powder
1 tbsp. ginger garlic paste
1 tbsp. lemon juice
1/2 tsp salt
For Dry spices masala:
1 1/2 tbsp. coriander seeds
1 tsp peppercorns
1 tsp cloves
1/2 inch cinnamon stick
5-6 green cardamom
A small piece of nutmeg
For Gravy:
2 tbsp. oil
2 tbsp. ghee (Clarified butter)
3-4 green chillies finely chopped
4 medium sized onions finely chopped
1 tbsp. ginger garlic paste
1/2 tsp turmeric powder
2 tbsp. red chili powder
Salt to taste
5 medium sized tomato puree
2 tsp coarsely ground masala
1 tsp garam masala
1 tbsp. kasuri methi
4 cups of water
Wheat flour slurry (1 tsp wheat flour + 4 tbsp. water)
Freshly chopped coriander leaves for garnishing
For Tadka (Tempering):
2 tbsp. ghee (Clarified butter)
1 tsp red chilli powder
Ground masala
1 tsp ginger garlic paste
METHOD:
First marinate the chicken. For that take the chicken and add red chilli powder, ginger garlic paste, lemon juice and salt. Mix everything well and marinate the chicken for at-least 30 minutes.
Now to prepare dry spices masala heat a pan and add coriander seeds, peppercorns, cloves, cinnamon stick, green cardamom and small piece of nutmeg. Dry roast all the spices till they are aromatic. Once they are completely cooled down transfer it into a mixer jar and grind it to a coarse powder. Keep this masala aside for later use.
Now heat a kadhai and add oil and ghee (Clarified butter). Now add 3-4 green chilies finely chopped and onions finely chopped. Sauté the onions till golden brown in color. Once onions turns golden brown add ginger garlic paste, turmeric powder, red chili powder and Salt to taste. Mix everything well and cook the masala for 2-3 minutes. Add 5 medium sized tomato puree and mix well. Once everything mix well cover it and cook it for 5 minutes or till the masala releases its oil. Now add 2 tsp coarsely ground masala and keep the remaining masala aside for further use. Also add 1 tsp garam masala and mix well.
Now add the marinated chicken and sear the chicken on high flame for 4-5 minutes. Add 4 cups of water and mix everything well. Cover and cook it for 20-25 minutes or till the chicken is cooked completely. Add the wheat flour slurry and mix well.
Heat a pan on a low flame and add 2 tbsp. ghee (Clarified butter) and add red chili powder, remaining ground masala, ginger garlic paste and fry the masala on very low flame for 2-3 minutes.
Now add the tadka (tempering) to the chicken gravy and mix well. Finally add 1 tbsp kasuri methi and switch off the flame. Garnish with some freshly chopped coriander leaves.
Serve Dhaba Style Tarriwala Murgh with tandoori roti, Naan or just plain steamed rice.
