Yesterday I cooked some Saint Louis style Pork ribs.This is Part one of just me setting up and getting a fire started.It was a request from a friend want ing to see a BBQ fire started from scratch. So the Kamado Joe Classic is somewhat different from a metal BBQ pit. You should not use briquettes on an Ceramic types smoker.The reason being that the binders in briquettes in them will adhere to the walls of the ceramic smoker which is a bad thing. .So always use Lump charcoal.
