🍊 Orange-Glazed Beef Roast with Potatoes & Carrots
🛒 Ingredients (Serves 6)
For the roast
3 lb beef chuck roast
1½ lb baby potatoes
1 lb carrots, peeled
2 tbsp olive oil
Salt and black pepper, to taste
1 tsp garlic powder
1 tsp dried thyme
For the orange glaze
¾ cup orange juice (fresh or bottled)
Zest of 1 orange
¼ cup honey or brown sugar
3 tbsp soy sauce
3 cloves garlic, minced
1 tbsp Dijon mustard
2 tbsp butter
Fresh thyme or parsley, for garnish
👩🍳 Instructions
Preheat oven to 325°F.
Season beef roast generously with salt, pepper, garlic powder, and thyme.
Heat olive oil in a large oven-safe pan or roasting dish. Sear roast on all sides until browned.
Arrange potatoes and carrots around the roast.
In a saucepan, combine orange juice, zest, honey, soy sauce, garlic, and Dijon. Simmer for 5–7 minutes until slightly thickened. Stir in butter.
Pour glaze over the roast and vegetables.
Cover loosely with foil and roast for 2½–3 hours, basting occasionally, until beef is fork-tender.
Remove foil for the last 20 minutes to deepen the glaze.
Garnish with fresh herbs and orange slices before serving.
