Here is my Eastern European lettuce soup recipe:
1 head of lettuce
smoked bacon / ham
4 cloves of garlic
1 grated carrot
2 tbsp of vinegar
1 tsp of salt
1/2 tsp of black pepper
1 tsp of paprika
2 egg yolks
150 g of sour cream
I hope you try it, it is especially good while hot in the fall/winter months, served with sour cream, chopped green onions, and toast. In the summer this soup can be eaten cold, and it is very cooling.
Hope you give this one a try, it has simple ingredients, it takes no time to make, and it is very delicious. It reminds me of hot and sour soup, except this soup isn't spicy.
