We all know the best thing about Boxing Day is the sandwich made with all the delicious Christmas Day leftovers! This festive take on a ham, eggs and chips sandwich is a game changer! 💖 The crunchy spuds, tangy slaw and umami mayo are topped with ham and a sage-fried egg.
INGREDIENTS 🌟
2 slices sourdough, other sturdy white bread or 1 large piece focaccia
4 leftover roast potatoes
2 thick slices ham
1 egg
A few sage leaves
Butter, for frying
Oil, for frying
Brussels sprout slaw
75g trimmed, shredded (raw) sprouts¼ red onion, very finely sliced 1 small bunch chives, finely chopped (optional, no worries if you don’t have them)1/2 teaspoon mustard
1/2 tablespoon white wine vinegar
1 tablespoons olive oil
Umami Storecupboard Mayo
2 tablespoons mayo
Dash Worcestershire sauce
1 teaspoon wholegrain mustard
1 teaspoon Dijon mustard
For the roast potatoes, heat a dash of oil in a frying pan and add a couple of cloves of garlic and some thyme or rosemary if you have them to hand - no problem if not.
Once hot, add your cold roasties and squish them down with something, like a mug or glass. Fry until crisp on both sides - 5-10 minutes.
Combine all the ingredients for the mayo and mix well.
Combine all the vegetables for the coleslaw. Combine the mustard, vinegar and olive oil with a pinch of salt and pepper and whisk to combine. Toss with the slaw.
Reheat the frying pan and add a chunk of butter, then fry the egg with the sage leaves.
Make the sandwich by spreading the mayo on one piece of bread, topping with the slaw. Add a layer of crispy potatoes followed by the ham. Top with the egg and ENJOY!
