Biltong is loved by all South African's and those who've tried it. I call it chocolate meat :) I've been making my own Biltong since I moved to the U.S., there's been a lot of trial and error. Today I have perfected an authentic original recipe, using simple ingredients that packs the best flavor you'll get out of this beloved snack. I like my biltong with a little bit of fat and still slightly rare in the middle. Trim down the fat if you're not a huge fan of it (but try it first, you won't regret it), and dry the meat a day or two longer if you'd like it a dryer/harder.

Unlike Jerky, biltong is air dried so you would need to build (or purchase) a biltong box. Here is a link to help you get started.

Ingredients:
± 3 lb rump roast (I like rump because of the layer of fat. You can also use silverside, topside, fillet, sirloin. Stay away from chuck roast or bone-in steaks)
1/3 cup kosher salt (you may not use all but you want to cover the steaks generously and evenly)
Vinegar mixture
1/2 apple cider vinegar
1/4 cup malt vinegar
1 tsp Worcestershire sauce
Biltong seasoning
1 cup coriander seeds, toasted and blended
1 tbsp salt
1 tbsp garlic powder
1 tbsp paprika
1 tbsp red pepper flakes
