Soft tofu stew is one of the most popular stews in Korean cooking. There are many versions of spicy tofu stew with seafood, meat and vegetables. Today I made non spicy vegan mild soft tofu stew. It is a very comforting dish for a cold winter day.
Ingredients:
3 oz zucchini: chopped
2 oz onion: chopped
1 green onion: sliced diagonally
1 red chili pepper: sliced diagonally (optional)
1 pack soft tofu: cut in big chunks
1 tsp sesame oil
1 tsp chopped garlic
1/2 tsp yondu (vegetable umami sauce for vegan)
Enoki mushroom
Vegetable broth:
Dry kelp: 3 inch square
4 dry shiitake mushroom
3 cup water
*You can add egg on top of the stew, if you are non vegan.
