Duck Confit Recipe
Here is the recipe:
DUCK CONFIT
Ingredients (for 4 servings)
The Cure
4 duck legs
¼ cup salt
1 Table spoon minced garlic
10 crushed black peppercorns.
1 bay leaf, crushed
1 sprig thyme, chopped
1 spring of rosemary chopped
For the cooking Part
800 milliliters duck fat
½ head garlic, crushed
1 whole clove
Procedure
For the Cure
Mix all the ingredients for the cure in a bowl. Rub the legs all over with the salt
mixture and place in a container. Cover with plastic wrap and refrigerate for 1 day.
For the Cooking
Remove the duck legs from the container and rince them off and dry them off.
Melt the fat in a sautoir and add the duck legs and the extra garlic and clove.
Cook the meat until it is very tender and start falling off the bone. 1hour 1/2.
The fat should maintain a temperature off 190°F.
Gently remove the meat from the pot when cooked, and place it in a clean
container. Strain the fat over the pieces of confit, making sure they are
completely covered.
When cool, refrigerate until needed
