Spaghetti with Creamy Goat Cheese and Roasted Beets-So delicious!
Ingredients:
1lb Spaghetti
5 medium size beets or (3 large)
About 1 cup of beet greens, chopped
1 medium onion
5 cloves of garlic, diced
Crumbled goat cheese
Fresh herbs to sprinkle on top ( I used dill form our garden but Italian parsley works nice too:)
Extra Virgin Olive Oil
Salt and Pepper

Preheat oven to 400 degrees. Wash, peel and quarter your beets. Drizzle them with a generous amount of extra virgin olive oil and salt. (Pepper tends to make food bitter if roasted, so I do not use pepper when roasting). Roast in oven until fork tender...about 25-30 minutes. Dice your onion and saute in olive oil (I coat the bottom of the entire pan) for about ten minutes or until lightly golden brown. I like to season with salt and pepper as I go. Add your garlic and saute for about 1 minute. Add your greens, a pinch of salt and pepper and do the same. Add your roasted beets to the mixture. Serve over a bed of yummy spaghetti thats been drizzled with olive oil, salt and pepper. Top your dish with creamy and crumbled goat cheese along with your fresh herbs. Serve with Creamy Cucumbers with Dill. Bon Apetite!

Creamy Cucumbers with Fresh Dill
Wash, peel and scoop out the seeds from 1 large cucumber (removing the seeds helps prevent from this being too watery). Slice your cucumbers. In a bowl, add about 1/2 to 1 cup of sour cream to your cucumbers as well as plenty of salt and fresh ground pepper along with fresh dill. Mix well. This is a delicious in summer time! Double or triple it for a larger crowd:)
