Traditional Lamb Kabsa Recipe | Saudi Spiced Rice & Meat Dish (كبسة لحم)
Craving authentic Middle Eastern comfort food? Try this rich and aromatic Lamb Kabsa, one of the most famous rice dishes from Saudi Arabia and the Gulf region! Made with tender lamb, long-grain basmati rice, and a blend of warm kabsa spices, this dish is a flavor explosion that’s perfect for family gatherings or special occasions.
Ingredients
For the Lamb
• 1 kg lamb (cut into pieces)
• 3 tbsp ghee or vegetable oil
• 1 large onion (sliced)
• 3 cloves garlic (minced)
• 1 thumb-sized piece ginger (grated)
• 2 tomatoes (chopped)
• 1 tbsp tomato paste
• 1 green chili (optional, for heat)
• 2 dried lime
• 2 Bayleaf
• 2 cinnamon stick
• 5-6 pcs cardamom
• 5-6 pcs cloves
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1 tsp paprika
• ½ tsp turmeric
• ½ tsp ground black pepper
• ½ tsp ground nutmeg
• Salt
For the rice
• 2 cups long-grain basmati rice (rinsed and soaked for 20–30 minutes)
• 3 ½ cups lamb stock (from boiling the lamb)
• 2 carrots (grated or julienned)
• ¼ cup raisins (optional)
• ¼ cup slivered almonds (lightly toasted, for garnish)
Traditional Dakkous (Saudi Tomato Salsa)
Ingredients:
blend all together until smooth
• 2 medium ripe tomatoes
• 1 small onion
• 2 garlic cloves
• 1 tbsp tomato paste
• 2 tbsp olive oil
• Salt to taste
• ½ tsp ground cumin (optional)
• ½ tsp sugar (optional – balances acidity)
• Juice of ½ lemon or 1 tbsp vinegar
• Small handful of fresh coriander
