Breakfast tortilla bake
Take 6-8 large tortillas and fold them up like an accordion into a baking dish.
Get some ham or thinly sliced meat of any kind that’s already cooked and stuff it into the spaces. Take 100g of cheese and sprinkle it a the folds of the tortilla bake. (Optional) add a chopped handful of spinach or bell peppers diced into the folds. Take 150ml or 3/4 cup of milk and whisk it together with 3 eggs. Add 1tsp of salt. Pour the mixture into the baking pan over the tortillas and bake at 180c for 12-15 mins in the air fryer or 18-20 minutes in an oven.
CRISPY CHICKEN BREAST
Take a 300g pack of chicken breast and boil the chicken in a pot with a chopped scallion, 1/2 a piece of ginger, and 1/2tbsp of cooking wine for 15 minutes.
Shred the chicken into small pieces. Add
1tsp pepper, 3tsp soy sauce, and 1tsp oyster sauce. Massage it into the shredded chicken.
Get a skillet and add 2-3 tbsp of a high smoke point oil(we prefer avocado oil)
Cook the chicken until it changes color and becomes crispy. It takes 10 minutes or so it could take longer depending on the sizes of the chicken pieces.
Then add 1tsp of sugar, 1/2 tsp cumin, 1tsp or more of crushed red pepper. Top it off with green onions!
SHRIMP SEAWEED SQUARES
(This recipe is one that I just wing all the time so there aren’t any exact measurements or spices that we even use. So you will have to experiment with the flavor profiles you want)
Take a pack of raw shrimp and chop it up until you have a paste. I like to add green onion, corn, and salt(but you can add whatever you want. If you want to check the taste before you cook it you can take a little bit of the mixture and throw it in the microwave or cook it on the skillet to taste the seasonings)
Take some kimbap or sushi seaweed and cut it into however many pieces you want. I like to do 4 pieces. Spread the shrimp paste mixture onto the seaweed pieces and then fry in a shallow pan starting from the shrimp side. They only need a few minutes on each side as shrimp cooks super quickly. Keep on a baking rack so the seaweed doesn’t become soggy before serving.
CRISPY SEAWEED TOFU
Take a pack of firm tofu, drain the water, and cut in half lengthwise or cut into 3rds depending on the size of the block of tofu. Grab some sushi seaweed and wrap it around each long piece. Cut immediately before the seaweed gets too soggy.
Coat the tofu in corn starch and fry in a shallow pan until crispy. Tofu takes a couple minutes in each side.
To make the sauce(not something we usually measure so there aren’t exact measurements) take soy sauce, minced garlic, a little liquid sweetener, sesame seeds, red pepper flakes, and lots of scallions and mix it in a small bowl. You just want to make sure the liquid sweetener is only about 1/8th of the amount of soy sauce you added. It’s not meant to be a sweet sauce. The liquid sweetener just cuts some of the saltiness of the soy sauce.
REESES LOW CALORIE PB2 CHOCOLATE BALLS
Take 1/3 cup applesauce and mix it with
1 1/4 cup pb2 powder (or more) until you get a nice thick consistency. Depending on the type of peanut butter powder you use you may need more applesauce. If you are using unsweetened applesauce you can add a liquid sweetener and add more peanut butter powder if it’s too watery until it makes a thick pliable dough. Roll into balls.
Melt 1/2 cup chocolate chips with a little coconut oil or butter. Dip the balls into the chocolate and keep in freezer or fridge until solid.
