Описание: Cooking Ash Reshteh in the forest:
We're excited to take our friends through two days of our lives and the process of cooking Ash Reshteh. Ash Reshteh is one of the most well-known and traditional soups in Iran, that is healthy and nutritious. Ash is typically a persian type of soup that has varieties and Reshteh is a persian noodle made with wheat flour that could be replaced by a thick kind of noodle. Follow our recipe and tips for a delicious outcome.
Ingredients:
Yield: Enough for 5 people
• 1 Cup of Chickpeas
• 1 Cup of Lentils
• 1 Cup of Beans
• 400g Reshteh
• Fresh herbs:
• 200g Chives
• 200g Parsley
• 200g Cilantro
• 200g Dill
• 1000g Spinach
• Garnish:
• Kashk (whey/curd which is a dairy
product)
• Fried mint
• Fried onion
• Fries garlic
• Saffron
Recipe:
Soak the legumes preferably overnight or at least for 3 hours.
Chop the fresh herbs.
Cook the legumes in the same pot.
Add the fresh herbs to the legumes and add water, salt, and black pepper as needed and cover.
Once the herbs are fully cooked, add the Reshteh to the pot.
For garnish:
Chop the onion and fry until golden brown, then add turmeric.
Heat 100g of your preferred oil in a pan with 2 tablespoons of dried mint.
Chop and fry 1 garlic clove.
Important tips:
Make sure that the Ash has enough water before adding the Reshteh.
The better cooked the legumes are, the tastier the Ash will be.
Dried mint needs high heat and little time, and it burns quickly. We hope you enjoy it 🔥
