In this video, I'll guide you through the process of canning tomatoes without using a pressure canner.
To get started, I always make sure to have all my tools ready. I've got a pot boiling on the stove for blanching the tomatoes, a bowl of ice water for cooling them down, and another bowl for coring and skinning. You'll also need some citric acid and a bit of pickling salt for flavoring.
Don't forget to prepare your canning tools, sterilize your jars, and get your lids and bands ready. We'll be using the Denali pressure canner pot as a hot water bath, which is perfect for preserving your tomatoes without scratching your flat top or glass top stove.
Once everything is set up, it's time to start coring and blanching the tomatoes. I'll show you the raw pack method, where we place the tomatoes directly into the jars without cooking them beforehand. If you don't have citric acid, you can use lemon juice as a substitute.
After blanching, the skins easily peel off, and the tomatoes go straight into the jars. This canning method is ideal for storing your tomatoes in the freezer, but in this video, we're going to make them shelf-stable for long-term storage.
I'll guide you through each step, including adding pickling salt, wiping the jar rims, and filling them with hot water to create a hot water bath environment. We want to make sure to remove any air bubbles with a debubbler and leave sufficient headspace before sealing the jars.
Once the lids are on, we load the jars into the canner, making sure they are covered with water. We gradually bring it to a boil and process the jars for 40 minutes. It's a great way to preserve your hardworking homegrown vegetables and enjoy them throughout the year.
At the end of the video, I'll update you on the final result, and you'll see the shelf-ready tomatoes that we've preserved. Remember, if you prefer not to can, you can also blanch the tomatoes and freeze them for future use, like making delicious homemade salsa.
