Ingredients
🤤100 g rice ada (ready-made)
🤤3 medium-sized carrots
🤤1 liter full-fat milk
🤤1½ cups sugar, or to taste
🤤¼ tsp cardamom powder
😋2 tbsp ghee
😋2 tbsp cashew nuts
😋2 tbsp golden raisins
Instructions
Prepare the ada
Bring a pot of water to a boil. Turn off the heat, add the rice ada, and cover for 30 minutes, or according to package directions.
Drain the water from the soaked ada and set it aside.
Cook the carrots
Wash, peel, and grate the carrots.
In a pressure cooker, combine the grated carrots with about 2 cups of milk and pressure cook for 2 whistles until the carrots are tender.
Once the pressure has released, allow the carrots and milk mixture to cool slightly.
Transfer the mixture to a blender and puree it until smooth. Set the carrot puree aside.
Combine the payasam
In a heavy-bottomed pan, add the remaining milk and bring it to a boil over medium heat.
Add the cooked rice ada and simmer for 10 minutes, stirring frequently to prevent sticking.
Pour in the carrot puree, mix well, and continue to cook for another 10 minutes.
Stir in the sugar until it completely dissolves. Cook for 5 more minutes, until the payasam thickens slightly.
Remove the pan from the heat and stir in the cardamom powder.
Garnish and serve
In a separate small pan, heat the ghee over medium heat.
Add the cashew nuts and fry until they turn light brown.
Add the raisins and continue to fry until they plump up.
Pour the roasted cashew nuts and raisins into the prepared payasam and stir to combine.
Serve the carrot palada payasam warm or chilled.
