Here’s yet another timeless traditional recipe from Tamil Nadu — Thirupullani Paal Payasam, a rich and creamy dessert made with five simple yet divine ingredients: rice, milk, saffron, jaggery, and cardamom. ✨ Ingredients:
¼ cup raw rice
1 litre full-fat milk
1 cup nattu sarkkarai (jaggery)
2 pinches saffron
1 tsp cardamom powder

Rinse ¼ cup of raw rice and spread it on a white cloth. Let it dry completely for about 30 minutes.
Once dry, grind the rice into a coarse powder and keep it aside.

Let the mixture simmer on low flame for 10 minutes until the rice is fully cooked and the payasam turns creamy.
Add 1 cup of nattu sarkkarai, mix well until it dissolves completely.
Stir in 1 teaspoon of cardamom powder, a small drizzle of ghee, and a tiny pinch of edible camphor for that divine temple-style aroma.
Adjust the consistency with a little warm milk if needed — traditionally, it’s made thick and rich.
Once the aroma fills your kitchen and the texture turns glossy, turn off the flame and transfer to a serving bowl.
