Lauki Ka Halwa
Ingredients:
• Bottle gourd (lauki) – 2 kg
• Green food color – 1 pinch
• Sugar – 1 cup
• Mixed dry fruits – 100 grams
• Silver leaf (chandi ka warq) – as needed
• Cardamom powder – as needed
• Clarified butter – 1½ cups
Method:
First, boil the bottle gourd. When it becomes tender, dry the excess water. Then add green food color, sugar, clarified butter, and cardamom powder and cook on high heat while stirring. When the moisture dries up, add the mixed dry fruits and mix well. Finally, transfer to a dish, garnish with silver leaf, and serve hot.
Mutton Paya
Ingredients:
• Boiled mutton trotters (paya) – 6
• Onions – 2
• Stock (yakhni) – 2 glasses
• Ginger garlic paste – 1 tbsp
• Red chilli powder – 2 tsp
• All spices powder – 1 tsp
• Coriander powder – 2 tsp
• Black pepper – 1 tsp
• Cumin – 2 tsp
• Turmeric – 1 tsp
• Cardamom – 4
• Salt – 1 tsp
• Oil – 1 cup
• Nutmeg (jaifal) – ½ tsp
• Mace (javitri) – ½ tsp
For garnish:
• Green chillies – as needed
• Ginger – as needed
• Fresh coriander – as needed
• Mint – as needed
• Lemon – as needed
Method:
Wash the mutton trotters and boil them until they become tender and only 2 glasses of water remain. Brown the onions in oil. In a bowl, mix ginger garlic paste, red chilli powder, turmeric, coriander powder, black pepper, and salt with a little water, then add this mixture to the onions and sauté briefly. When the aroma rises, add the trotters and fry well. Add the stock and cook on low heat for 20 minutes.
Turn off the heat and add garam masala powder, crushed nutmeg, cardamom, mace, and cumin.
Serve the prepared paya with green chillies, ginger, fresh coriander, mint, and lemon.
