Raspberry Filled Chocolate Cupcakes

Описание: Chocolate Raspberry Filled Cupcakes

Frosting:
1 cup fresh Raspberries
1 Tbsp lemon juice
2 Tbsp sugar
Smash berries and cook until thick and strain reserving juice only. Cool completely! You should have 3 to 4 Tbsp of thickened juice.
1 cup butter
3 cups powdered sugar
Reserved juice.
Mix on high until fluffy

Cake:
1 cup ap flour (130g)
1/3c cocoa (40g)
1/2tsp baking powder
1/4 tsp baking soda
1 stick of butter
1/2 cup Caster sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla
3/4 cup buttermilk

I used store bought raspberry jelly for the filling.

Follow video instructions.

Bake cupcakes at 350° for 18 to 23 minutes.
Cut a 1 inch hole in the center of each cooled cupcake. Fill with jelly and pipe on the delicious frosting.
