Caramelized Onion & Mushroom Tart

This is dangerously good and easy 🍄🧅 Save this one!
1 puff pastry sheet
150g cream cheese
1 tbsp sweet chilli sauce *optional
80g white cheddar cheese, grated
250g button mushrooms, sliced
2 large onions, sliced into thin halves
2 tbsp olive oil
1 egg
salt to taste
Garnish with chopped parsley (which I clearly forgot to do 😂)
1. Preheat your oven to 200 degrees celsius.
2. In a medium-sized pan, add the olive oil, sliced mushrooms and onions together and saute on medium-high heat for around 15mins or until beautifully soft, brown and caramelized. You want some charr on the mushrooms and onions because that adds great flavour to the end result :)
3. Place your defrosted puff pastry on a baking tray that has been lined with baking paper.
4. Lightly line a border with a butter knife - this will help the edges to puff up whilst baking.
5. Add the sweet chilli to the cream cheese in a small bowl and mix well. Add the sweet chilli sauce is optional.
6. Spread the cream cheese on the base of the puff pastry, within the borders. If you opted for grated cheese then spread the grated cheese evenly - you may also add a few dollops of sweet chilli sauce on top of the grated cheese if you wish.
7. Add the onion and mushroom mixture on top of the cheese and sprinkle over a generous amount of salt.
8. Scramble the egg in a small bowl and brush the edges of the puff pastry with the egg wash.
9. Bake for 15-20mins or until crispy and golden brown.
10. Allow the tart to cool or, honestly, just start cutting her up and serve - no waiting! :)
