1/2 tbsp olive oil
1 small yellow onion, diced
1 green bell pepper, seeded and diced
1 tsp sea salt
3 cloves garlic (about 1 tablespoon), minced
1 tsp ground cumin
1 tsp dried oregano
1 tbsp tomato paste
1 lb dried back beans
3 cups water
1 bay leaf
Optional for serving: jalapeno, red onion, cilantro

INSTANT POT SPICY “REFRIED” BLACK BEANS

1 tbsp olive oil
1 lb dried black beans (about 2 cups), rinsed and drained
3 1/2 cups water
1 tsp ground cumin
1/2 tsp chipotle chili powder
2 cloves garlic, minced
1/2 jalapeño, seeds removed (optional)
1 tsp sea salt
1 tbsp freshly squeezed lime juice
Optional for serving: cotija cheese and diced avocado

INSTANT POT BLACK BEANS AND RICE

1 tbsp olive oil
1 cup yellow onion, diced
3 cloves garlic, minced
1 1/2 cups brown rice, rinsed (uncooked)
1 1/2 cups dried black beans
2 cups fresh tomatoes (approx 4 tomatoes), diced
2 cups low sodium vegetable broth
3 cups water
1 tsp sea salt
1 tsp cumin
1/2 tsp chili powder
1/2 tsp oregano
1/4 tsp cayenne pepper
Optional for serving: lime wedge
