Smoked Country Ranch Green Beans & Potatoes with Bacon (OK it's not quite a meatless dish) might just be the ultimate backyard side dish. In this episode of Smokin’ n Drinkin’, we take a classic country recipe and level it up with wood-fired flavor on the pellet smoker.
Tender baby red potatoes, fresh green beans, crispy bacon, and bold ranch seasoning all come together in a cast iron skillet. Then we let hickory smoke work its magic.
This dish is:
✔ Perfect for BBQ cookouts
✔ Easy enough for weeknights
✔ A killer side for brisket, ribs, or smoked chicken
✔ Comfort food with real smoke flavor
If you’re looking for a smoked vegetable side dish that actually steals the show — this is it.
🛒 Ingredients
• 1½ lbs baby red potatoes, halved
• 1 lb fresh green beans, trimmed
• 8 strips thick-cut bacon, chopped
• 1 medium red onion, thin sliced
• 2 tbsp olive oil
• 1 packet dry ranch seasoning (or 3 tbsp homemade)
• 1 tsp garlic powder
• 1 tsp smoked paprika
• 1 tsp cracked black pepper
• Optional: pinch red pepper flakes
Pellets: Hickory (bold)
🔥 Step-By-Step Instructions
1️⃣ Preheat
Set smoker to 375°F.
2️⃣ Parboil Potatoes (Recommended)
Boil potatoes in salted water for 8–10 minutes until just fork tender. Drain.
(This prevents undercooked potatoes.)
3️⃣ Render Bacon
Place cast iron skillet on smoker.
Cook bacon until just crispy.
Remove bacon but leave the grease.
4️⃣ Sauté Onion
Add sliced red onion to bacon grease.
Cook 5–7 minutes until softened and slightly caramelized.
5️⃣ Combine Everything
Add:
• Potatoes
• Green beans
• Olive oil
• Ranch seasoning
• Garlic powder
• Paprika
• Black pepper
Toss until evenly coated.
6️⃣ Smoke Roast
Cook 30–40 minutes, stirring once or twice.
You’re looking for:
• Tender potatoes
• Slight blister on green beans
• Light caramelization
7️⃣ Finish
Add bacon back in for the last 5 minutes.
Let it soak in that smoke.
Serve hot in the skillet.
🍻 Drink Pairing
Since you tie food and fermentation together:
Option 1: Pinot Grigio
Semi-sweet to dry white wine pairs perfectly with the ranch and bacon saltiness.
Option 2: Smoked Lager
Light, crisp, balances the fat.
Option 3: Bourbon Lemonade
If you want a cocktail with some kick while keeping it a little lighter.
