1. Sourcing Raw Cashews

The process begins with the procurement of raw cashew nuts (also called cashew seeds) from farms. These are often sourced locally or imported from other cashew-producing regions, such as Africa.

2. Drying

The raw cashew nuts are sun-dried to reduce moisture content. This step is crucial for preserving the nuts and preparing them for further processing.

3. Roasting or Steaming

The nuts are either:

Roasted in rotating drum ovens to make the shells brittle.

Steamed to soften the shells, making them easier to remove.


The method depends on the processing unit’s technique and desired output.

4. Shelling

This step involves manually or mechanically removing the hard outer shell of the cashew nut. Many units in Vetapalem still rely on manual labor for precision, as the shells contain a toxic resin (cardanol) that must be handled carefully.

5. Drying the Kernels

After shelling, the cashew kernels are dried in hot chambers or under the sun to reduce moisture and prepare them for peeling.

6. Peeling

The thin, brown outer skin of the cashew kernel is removed, either manually or with machines. This step reveals the white, edible cashew nut.

7. Grading
