2 cups fine almond flour
8 tbsp unsweetened cocoa powder
2 tsp baking powder
1 tsp baking soda

4 large eggs, room temperature
3/4 cup granulated erythritol/monkfruit blend (or preferred keto granulated sweetener)
1/2 cup extra-light olive oil (or avocado oil)
1/2 cup sour cream
1/2 cup unsweetened almond milk
2 tbsp strong brewed coffee, cooled (enhances chocolate; optional but recommended)
2 tsp vanilla extract
Ingredients – Glossy Chocolate Ganache Frosting
1 1/2 cups sugar-free dark chocolate chips (~9 oz)
2/3 cup (160 ml) whipping cream (35% fat)
1/4 cup powdered keto sweetener (sifted)
2 tsp vanilla extract
Pinch of salt
Instructions
Cake:
1. Preheat oven to 350 degrees Fahrenheit. Grease and line a nine-inch pan with parchment.
2. Whisk dry: almond flour, cocoa powder, baking powder, baking soda, salt.
3. Whisk wet: eggs plus granulated sweetener until thick. Add olive oil, sour cream, almond milk, coffee, vanilla.
4. Combine dry into wet until smooth (add one to two tablespoons milk if thick).
5. Bake 22-25 minutes (toothpick shows moist crumbs). Cool fully in pan.
Ganache:
1. Melt sugar-free chocolate chips plus heavy cream (microwave fifteen-second bursts).
2. Stir in powdered sweetener, vanilla, salt. Cool ten to fifteen minutes.
3. Frost cooled cake. Top with sea salt or shavings if desired.
