This spicy grilled lemongrass chicken retains all the flavors you love, such as bold lemongrass, garlic, and the umami from fish sauce, while adding a serious kick with dried Thai chilies. The result is a dish that’s fiery, vibrant, and perfect for summer cookouts. The marinade can be prepared ahead of time, making it ideal for entertaining. And if you’re looking to change things up from the usual burgers and hot dogs, this might be your new favorite.

What makes this chicken so addictive is how the marinade builds layer upon layer of flavor. It all starts with finely minced lemongrass, which brings that signature earthy and citrusy aroma.
