Ingredients:
1 cup chickpeas
4-5 cups water
2 tbsp oil or ghee
1 medium onions, finely chopped
1 tomatoes, pureed
2-3 garlic cloves, minced
1-inch ginger, grated
2 green chilies, slit
Spices:
1 tsp cumin seeds
2-3 cloves
1 small cinnamon stick
1 bay leaf
3/4 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1 tsp chole masala (optional, for an authentic taste)
1 tsp dried mango powder (amchur)
Salt to taste
For Garnish:
Fresh cilantro leaves, chopped
1 tbsp lemon juice
Ginger juliennes (optional)
Instructions:
Prepare the Chickpeas:
Soak overnight in water. Drain and rinse. Pressure cook with water, a pinch of salt.
Heat oil or ghee in a pan. Add cumin seeds, bay leaf, cloves, and cinnamon stick. Sauté for 1 minute until aromatic.
Add onions and cook until golden brown.
Stir in ginger, garlic, and green chilies. Sauté for 1-2 minutes.
Add tomato puree and cook until the oil separates from the mixture.
Add the Spices:
Mix in turmeric, chili powder, coriander powder. Cook for another 2 minutes.
Add the cooked chickpeas (along with the cooking liquid if using dried chickpeas). Stir well.
Simmer for 10-15 minutes, adding water as needed to adjust the consistency.
Finishing Touches:
Stir in garam masala . Adjust salt to taste.
Simmer for 2 more minutes.
Serve hot with bhature, naan, or steamed basmati rice.
