Hi everyone, welcome back to my channel! Today, we’re making Shortbread Cookies with a Raspberry Jam Center. These cookies are buttery, melt-in-your-mouth treats with a hint of fruity sweetness. Let’s get started!
Ingredients:
50g sugar powder
110g unsalted butter, softened
150g all-purpose flour
1 egg white
Instructions:
1. Cream the Butter and Sugar powder.
In a mixing bowl, combine 50g of sugar powder and 110g of softened unsalted butter. Cream them together until light and fluffy. This helps give the cookies a smooth, tender texture.
2. Add Egg White.
Add 1 egg white to the butter and sugar mixture and mix until fully combined.
3. Add the Flour.
Gradually add 150g of all-purpose flour to the mixture, stirring just until everything is combined and you have a smooth dough.
4. Pipe the Cookies.
Prepare a piping bag fitted with a number 9FT nozzle. Spoon the dough into the piping bag. Pipe 14 cookies onto a baking tray lined with parchment paper. Leave some space between each cookie to allow for slight spreading during baking.
5. Bake.
Preheat your oven to 380°F (193°C).
Bake the cookies for 7 minutes.
6. Add the Raspberry Jam.
After 7 minutes, take the cookies out of the oven. Using a piping bag, add a small amount of raspberry jam to the center of each cookie.
Return the cookies to the oven and bake for an additional 5 minutes, until the edges are golden and the jam is set.
7. Cool and Serve.
Let the cookies cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
