How to make mangalorean style mutton curry with coconut
For 750 grams of mutton with bones.
For griding masala
Heat 1 tbsp oil amd roast
10 to 20 long dry red chilies
Small piece of cinnamon,5 cloves, 1 petal of star anise
Black pepper as per spice level
2 tbsp coriander seeds
1/2 tbsp cumin seeds
1/4 tbsp methi seeds
1/4 tbsp fennel (saunf)
Heat 1 tbsp oil and fry 5 curry leaves, 1 chopped onion, 5 cloves of garlic, and few cashew nuts till slight colour changes.
Roast 1/2 cup grated coconut for a minute. Add 1/2 tsp turmeric powder and grind all the above ingredients into a fine masala paste by adding enough water.
Set aside ground masala paste. Add 1 cup of water to the mixi jar and reserve this masala water to pressure cook mutton
Heat 2 tbsp ghee in a pressure cooker. Add curry leaves. 1 finely chopped onion and fry untill brown.
Add mutton pieces, stir and cook for 2 minutes.
Add one chopped tomato, salt as required. Stir and cook for two minutes.
Add reserved masala water and pressure cook the mutton till soft and tender.
Add the ground masala paste. Add enough water and adjust the gravy to semi thick consistency. And cook for 5 minutes in a medium flame.
Add finely chopped coriander leaves and switch off flame.
You can adjust chilies and black pepper as per spice level.
Enjoy this mutton curry with boiled rice, idli, dosa, neer dosa or appam.
