Hello dear friends, I hope you are all keeping well.
This week, I wanted to share with you some lessons Ive learnt over time in how to live more slowly in a big city. These things really helped me alot considering that Im naturally a quieter, more introverted kind of person, and creating certain ways of living for myself allowed me to live much more in the way I needed to in order to be able to thrive and live with alot more peace and happiness in a big, busy place and even when times were hard...
I hope that some of these ideas might help any of you who are maybe also seeking ways to help yourself live a more slower life.

Recipe for Nettle Soup:

-1tbsp olive oil
-1 onion, chopped
-3 cloves garlic
-2 medium white potatoes, chopped
-1L vegetable stock
-2 cups of fresh nettle leaves
-100ml vegan single cream (or non vegan if you prefer, or non....but this adds a bit of lovely creaminess to the soup)
-Salt and pepper to taste

-Put the oil in a pan and lightly cook the onion and garlic until golden.
-Add in the stock and potatoes and cook until they are soft.
-Add in the fresh nettles and the cream and cook for a further 5 mins or so.
The soup is now ready, but you can blitz it in a blender, which is what I do to make it creamy and nice!
