LUNCH ONE - [entire recipe serves 2-3]

LUNCH TWO - [entire recipe serves 2-3]
-- BBQ JACKFRUIT TACOS:
3-4 Corn Tortillas
Upton’s BBQ Jackfruit
Fresh Cilantro
Chopped Greens (Optional)
Lime Wedges (Optional)
-- BLACK BEAN MEDLEY:
*combine the following in a bowl
1 can black beans, rinsed
1 cup of fresh or frozen corn (thawed)
1 cup chopped tomatoes
½ packed cup fresh cilantro
1 cup salsa
-- SNACKS: Mandarin Orange and Almonds

LUNCH THREE - [entire recipe serves 2]
-- BUFFALO “CHICK’N” PITA BITES:
1-2 Mini Pitas
1 Buffalo Chick’n Sausage (see below)
Ranch Dip
-- CASHEW “RANCH”:
½ cup Cashews, soaked overnight
1 tbsp Lemon Juice
1 tbsp Fresh Dill
½ tsp Onion Powder
¼ cup Water
Salt to taste
-- SNACKS: Celery, Carrots, and Ranch Dip

BUFFALO CHICK’N SAUSAGES:
¼ cup red lentils + ¾ cup water, cooked
¼ cup + 2 tbsp Wing Sauce (the “Natural Butter Flavoring” in Frank’s is VEGAN!)
1 tbsp Tahini
½ cup Vital Wheat Gluten (I used Bob’s Red Mill)
2 tbsp Nutritional Yeast
Parchment Paper
Aluminum Foil
Directions: Cook your lentils, then blend them in a food processor with the nutritional yeast and buffalo sauce until creamy. Add in the nutritional yeast and wheat gluten, and blend for 1 minute; this should form a dough. Divide the dough in half and form two sausage shapes, then wrap these in parchment paper. Then, tightly wrap the sausages in aluminum foil, making sure it is tight and the ends are sealed. Steam the sausages for 40 minutes in a pot, flipping them halfway through. Use heat-protective gloves to remove the tin foil around them, and let cool.
