This hairstyle is called 髷 mage and it was originally used by the aristocrats and the samurai from ancient times.
For the aristocrats, the patch of hair was for wearing their tall lacquered headwear and for the samurai, it was a cushion between your head and the armor helmet so your head doesn’t get sweaty.
During the peaceful 250 year long Edo period (1603~1868) there were no more wars, but the hairstyle culture continued as a way to show that one was a noble warrior, who was ready to go and die in battle anytime.
And because sumo wrestling was a very popular form of entertainment during this era, the top ranking sumo wrestlers had rich and powerful Daimyo as their sponsors and they were even granted the highest social rank as samurai. This is why it gradually became a culture for sumo wrestlers to have the samurai hairstyle.
In the latter half of the 19th century when Japan Westernized, wearing mage was criticized by Western countries and the hairstyle itself was banned.
However, in order to preserve the iconic symbol of samurai, some government officials who loved sumo made it a rule for the sumo wrestlers to wear the mage. Due to their efforts, although sumo wrestlers are the only people, this tradition is still carried on today.
