My Honey Bourbon Glazed Double Smoked Christmas Ham glaze is below:
1/4 cup bourbon
1/4 cup apple cider vinegar
1/2 cup honey
1/2 cup brown sugar
1 tsp dijon mustard
Combine all ingredients and simmer until thickened. You want a syrup like consistency. The glaze will continue to thicken up as it cools down.
I've used a pre-smoked ham from my butcher, then i've smoked this one again using cherry wood for a subtle sweet smoke.
As this ham has already been cured and smoked before, we are basically re-heating it and making it look presentable for Christmas day..... Whilst adding some extra flavour!
Typically this cook will take around 2-3 hours for a half leg ham, 5-6 for a whole leg.
Process below:
Remove skin whilst leaving layer of fat on the ham
Score in a crisscross pattern
Add cloves into the diamond pattern
Smoke at 250f/120 for 2-3 hours until just below 140f/60c internal
Glaze the Christmas ham and continue cooking for 10 minutes to let glaze set
Glaze once more, let it set once more and it's good to serve!
This honey bourbon glaze is so simple but produces so much flavour that perfectly compliments the ham!
