Aloo Torkari / Sabzi for Kolkata Style Clib Kachori

Spicy Aloo Torkari / sabzi - Just like the ones which is served with Kolkata’s special Club Kachori! ✨
Ingredients:
1/2 cup boiled chana
4 boiled potatoes - peeled and broken by hand to large chunks
2 tbsp mustard oil
1 tbsp ghee
1/2 tsp paanch phoran and 1/2 tsp fennel seeds(Mouri/Saunf) - Lightly crushed
1 inch ginger and 2-3 green chillis - crushed
1/2 tsp hing
Spice mix - 1/2 tsp turmeric , 1 tsp red chilli , 1 tsp kashmiri red chilli, 1 tbsp coriander, 1 tsp cumin and 1/4th cup water
3/4 th cup tomato paste (3 tomatoes)
Salt
2.5 cups hot water
1.5 tbsp kasuri methi
1 tsp garam masala
handful of chopped coriander leaves
Cooking:
Heat mustard oil till smoking hot
Temper with crushed whole spices for 10 min
Add crushed ginger - green chillis and hing
Cook for 1 min till raw smell is gone
Turn flame to low and cook the spice mix
When it dries out add 1/4th cup water and cook for till oil separates
Add tomato paste and salt then cook for 10 more minutes
Add boiled chana and saute for 5 min
Add crushed potatoes. Saute for 5 min with 1 tbsp ghee
Simmer with 2 cups hot water. Adjust the salt
Finish with kasuri methi, garam masala and chopped coriander
