Mushrooms Masala In Thick delicious gravy
Serving-5
Ingredients
-600g (4 packet mushrooms
-3 tbsp ghee or oil
-1/4 tsp dry mango powder
-1 tsp jeera/cumin seeds
-4 tbsp basan /gram flour (2 add to the pan and 2 tbsp keep aside to thicken the gravy for later use)
-11/2 tsp Kashmiri chili powder
-1 tsp coriander powder
-1/2 tsp any meat masala powder
-1/2 tsp chaat masala powder
-1/2 tsp garam masala powder
-pinch Asafetida
-4 tbsp melon+cashew nuts roasted and powdered
-2 cup hot water
-2 tbsp coriander leaves
-3 tbsp hung curd
-2 tomatoes cooked in oil till oil separated
-3 green chilies slit
-2” ginger, 6 garlic crushed
-Garnish with coriander leaves
(Hung curd-place colander over a container to collect whey and add yogurt over the filter and leave it for about 30 minutes hung curd is ready)
Method
-Heat oil with ghee or butter add cumin add coriander leaves, then basan/gram flour roast it till it changes its color & becomes fragrant, add dry fenugreek leaves stir, add hung curd stir until you see like grated paneer
add cooked tomato stir until the oil separates
-Now add all the dry masalas (dry coriander powder, Kashmiri red chili powder, dry mango powder, garam masala powder, meat masala powder, chaat masala, hing/asafoetida, sugar, salt stir and cook until it turns into a dry thick masala
-Now add crushed ginger & garlic, green chillis, powdered melon & cashew nut, stir and cook until oil separates on sides
-Add 1 cup hot water cook this gravy until gravy thickens add butter cook for 5 minutes when you see oil on top
-Add 1 cup more water & 2 tbsp roasted gram flour and cook until the oil separates on top
-Add cut mushrooms mix well to combine
-Cook until you see thick gravy (5-8 minutes)
-Garnish with coriander leaves
-Enjoy with roti, parata
