Most pellet smoker rib recipes tell you to wrap your ribs halfway through the cook.
But what if that’s exactly why your ribs turn soft and mushy?
In this video I run a side-by-side test cooking two racks of pork ribs on a pellet smoker.
Same ribs.
Same rub.
Same pellets.
Same smoker.
The only difference is one step halfway through the cook.
One rack gets wrapped with butter, honey and liquid.
The other rack stays unwrapped to keep the meat fibers intact.
By the end of the cook you’ll see exactly why one rack falls apart for the wrong reasons… and the other comes out looking like real barbecue.
