A quick and simple Italian summer-time classic with a punchy twist. Championing our delicious Cooked Octopus tentacle and a decadent helping of Bottarga. Paired beautifully with gorgeous, juicy heirloom tomatoes and a splash of white truffle oil. Tim, our in-house chef, has devised this recipe to deliver maximum satisfaction with every mouthful.
Ingredients
-1 Octopus Tentacle
-Bottarga
-1 Ripe avocado
-2 Heirloom tomatoes
-1 Red Onion
-1 Orange
-1 Clove of garlic
-2 mixed colour chillis
-1 tbsp Olive Oil
-1tbsp Truffle Oil
Method:
Step 1:Firstly, thinly slice half a red onion and chillis, combine with the juice from half an orange and thinly sliced Bottarga. Next, cut your tomatoes into chunks and season with salt, ready for the grill..
Step 2: Clean the octopus, removing some of the excess juices but be mindful not to take off any of its skin. Chop your baguette on the angle and drizzle it with olive oil. Place the Octopus on the grill and cook for 2-3 minutes followed by the bread (oiled on both slides) and char your tomatoes for a smokey punch of flavour.
Step 3: Time to assemble the bruschetta, start by rubbing your toasted bread on both sides with a fresh clove of garlic, slice your octopus, layer the tomato salad and sliced avocado onto your slices of bread, generously add your sliced octopus and finally, finish with a drizzle of truffle oil
