Join me as I make homemade pesto from scratch! Below I share two delicious options for you to choose from: a lighter, healthy version and a rich, traditional version. Overtime I’ve stared cooking by feel & mood when it comes to pesto, but I’ve included my original measurements so you have a starting point.
Healthy Pesto Recipe (serves ~4):
• 2 cups fresh basil leaves
• 2 tbsp olive oil
• 2–3 cloves garlic
• 1/4 cup water (add more for desired consistency)
• 2-4 tbsp nutritional yeast (optional)
• 1/2 tsp salt (or to taste)
Traditional Pesto Recipe (serves ~4):
• 2 cups fresh basil leaves
• 1/2 cup grated Parmesan cheese
• 1/3 cup pine nuts or walnuts
• 1/2 cup extra-virgin olive oil
• 2 cloves garlic
• 1/2 tsp salt (or to taste)
