അടമാങ്ങ അച്ചാർ || Dried Mango Pickle || Adamanga Achar Kerala style
Ingredients:
Dried mango (cut to small pieces) - 2 cup
Garlic (sliced) - 10-12
Ginger (sliced) - 1 small piece
Kashmiri chilli powder - 2 Tbsp
Chilli powder - 1 Tbsp
Turmeric powder - 1/2 Tsp
Asafoetida powder - 1/2 Tsp
Fenugreek powder - 1/4 Tsp
Sesame oil - 1/4 cup
Mustard seeds - 1 Tsp
Dried red chillies - 2-3
Vinegar 2-3 Tbsp
Jaggery powder - 1/2 Tsp
Curry leaves
Method:
Soak 2 cups of dried mango in 2 cups of hot water.
Keep it aside for 30 minutes.
Heat a pan and add 1/4 cup sesame oil.
Add 1 Tsp mustard seeds and 2-3 dried red chillies.
Add 10-12 garlic(sliced), 1 small piece ginger(sliced) and curry leaves.
Saute for 30 seconds on medium flame.
Now turn the heat to low and add 2 Tbsp Kashmiri chilli powder, 1 Tbsp Chilli powder, 1/2 Tsp Turmeric powder, 1/2 tsp Asafoetida powder, 1/4 Tsp fenugreek powder.
Saute until the raw smell gone.
Add 2 Tbsp vinegar.
Now add soaked mango pieces (with water) to it.
Boil it in low flame for 2-3 mimutes.
Add 1/2 tsp jaggery powder.
After 2 minutes, remove from flame.
After cooling completely, keep it in a dried air-tight container.
