Chocolate Rolls Ingredients:
Makes 12 rolls

Dough:
4 cups (480-500g) all-purpose flour
⅓ cup (70g) granulated sugar
1 teaspoon (2g) instant coffee
1 teaspoon (5g) salt
⅔ cup (50g) cocoa powder
2¼ tsp (7g) instant dry yeast
2 large eggs
1⅓ cups (320g) whole milk
⅓ cup (70g) softened unsalted butter

Cinnamon Filling:
⅔ (135g) cup brown sugar
a pinch of salt
⅓ cup (32g) finely ground walnuts
2 tsp (5g) ground cinnamon
3 tbsp (24g) cocoa powder
¼ cup (57g) softened/melted butter

White Chocolate Glaze:
2 ounces (57g) white chocolate, chopped
4 teaspoons (20g) whole milk, more as needed
1 tbsp (14g) unsalted butter, softened
½ tsp (2g) vanilla extract
½ cup (60g) confectioners' sugar
