Today I’m going to share with you how to make the best red chicken enchiladas, seriously super delicious, these enchiladas are Sonoran style, it takes me back to my childhood days spending the evening at my best friends house , her sister would make us enchiladas this way and I was fascinated because they were different and who would of though that laying them flat makes a difference😅my son Nathaniel calls them moms lazy enchiladas 😂but regarless lazy or not they are the BEST CHICKEN ENCHILADAS!!!!! Ingredients:
Corn tortillas
Queso fresco
Boil:
2 lbs chicken
2 medium potatoes
1/2 onion
Garlic
3 bay leaves
Salt I used 2 tbsp for 3 qt water
Fry with 1/4 onion (chopped)
3/4 cup enchilada sauce
1/4 cup broth
Enchilada sauce:
8 New Mexico chile pods
1 chile ancho
2 garlic cloves
1/4 onion
2 1/2 cup broth
1/4 tsp whole cumin
1/2 tsp oregano
1/2 tsp whole black pepper
1 serving of love 💕
