This chickpea avocado salad is my go-to when I want something quick, healthy, and full of flavor. It’s packed with plant protein from chickpeas, healthy fats from avocado, and fresh crunchy vegetables. No cooking required—just chop, mix, and enjoy. Perfect for lunch, dinner, or a light meal.
Ingredients
1 cup boiled chickpeas (drained & rinsed)
1 ripe avocado, diced
1 med onion, finely chopped
1 tomato, chopped
½ cucumber, chopped
Fresh coriander (cilantro), chopped
1–2 tbsp olive oil
Juice of ½ lemon
Black pepper to taste
Paprika
Salt to taste
🥗 How to Make
Add chickpeas, onion, tomato, cucumber, and coriander to a bowl.
Gently fold in the diced avocado.
Drizzle olive oil and squeeze fresh lemon juice over the salad.
Season with black pepper and salt if needed.
Mix gently and serve fresh.
