#Ingredients
1 lamb leg or shoulder
½ cup chimichurri
8 garlic cloves
2 red onions, quartered
1 cup vegetable stock
Green sauce
1 green chilli
Parsley, coriander & mint
Juice of 1 lemon
1 tbsp Dijon mustard
1 tbsp honey
1 cup yoghurt
1 tsp ground coriander
1 tsp salt
¼ cup stock

#Method
1. Preheat oven to 160°C.
2. Make small cuts in the lamb and insert garlic cloves.
3. Place lamb in a roasting dish with onions and stock.
4. Smother with chimichurri, cover tightly with foil and roast 4–5 hours, turning once or twice, until falling apart.
5. Remove foil for the final 20–30 minutes to colour.
6. Rest 15 minutes, then pull apart.
7. Blend all green sauce ingredients until smooth.
8. Spoon generously over the lamb and serve warm.
