Are we OFFICIALLY a cooking channel? Maybe soon. You can't go wrong with this southern staple meatloaf. It was tender, moist, and will come together SUPER fast if you don't sauté the veggies.
Either way, this meatloaf turned out absolutely delicious and the leftovers were fantastic!
Our recipe:
1-1/2 TBSP bacon Grease or olive oil
2-1/2 lbs ground beef 80/20
3 c. chopped onion
1 c. chopped bell pepper
2 cloves garlic, minced
1 c. bread crumbs
1/3 c. chicken or beef broth
3 TBSP Worcestershire sauce
2 eggs
1 tsp thyme
2 TBSP salt (we used kosher)
1TBSP each: red pepper flakes, garlic powder, onion powder, Italian seasoning, Parsley
Salt & Pepper to taste
Bake @ 350°
Sauce:
2/3 c ketchup
1 tbsp mustard
1/2 c brown sugar
■ Use CAUTION when handling raw meat
■ Wear gloves if you wish when handling meat
