Want a healthy and filling meal made right in your rice cooker? This Quinoa & Brown Rice Veggie Bowl is a one-pot recipe that’s simple, nutritious, and full of flavor. Perfect for lunch, dinner, or meal prep!
Recipe Ingredients:
1/3 cup rinsed quinoa
1/4 cup brown rice
2 cups chicken broth (or veggie broth for vegetarians)
2 cups of mixed vegetables (fresh or frozen)
Seasonings: salt, pepper, garlic, herbs, cumin (to taste)
Instructions:
Rinse quinoa and brown rice.
Add quinoa, brown rice, broth, vegetables, and seasonings to your rice cooker.
Set the cooker to white rice or grain setting.
Cook until done, then fluff with a fork.
Suggested Toppings:
Minced green onion
Sliced avocado
Chopped tomato
Fresh salsa
Nuts or seeds (like pumpkin seeds or almonds)
