Recipe:
Ingredients
6 beef marrow bone cuts (about 1.2–1.5 kg / 2.5–3.3 lbs)
2 carrots (200 g / 7 oz), roughly chopped
2 celery stalks (150 g / 5 oz), roughly chopped
2 onions (300 g / 10.5 oz), quartered
1 garlic bulb (about 60 g / 2 oz), halved
2 bay leaves
1 tsp black peppercorns (5 g / 0.2 oz)
1 tbsp salt (15 g / 0.5 oz), adjust to taste
3 L water (3.2 qt)
Instructions
1. Prepare the fire: Set up your Dutch oven on a stable bed of hot coals. Keep extra coals nearby to maintain a gentle simmer.
2. Roast the bones (optional for deeper flavor): Place the marrow bones directly in the Dutch oven and roast over the coals for about 20–25 minutes until lightly browned.
3. Add vegetables: Add carrots, celery, onions, and garlic to the pot. Stir for 5 minutes until slightly caramelized.
4. Fill with water: Pour in 3 liters (3.2 qt) of cold water. Add bay leaves, peppercorns, and salt.
5. Simmer slowly: Bring to a gentle boil, then move the Dutch oven to a cooler bed of coals. Let the broth simmer for 3–4 hours, skimming off any foam or fat that rises. Add coals as needed to keep a light simmer.
6. Strain and serve: Remove the bones and vegetables. Strain the broth through a fine sieve. Adjust seasoning with salt.
7. Enjoy: Serve hot as a clear broth or use it as a base for soups and sauces.
