A new Mexican Christmas cookie recipe I'm trying out. I wasn't sure when I saw ancho chili powder and black pepper in the ingredients list, but it turned out great. I think you will enjoy them if you give them a try.
I converted this recipe to vegan by using plant-based butter and a chia egg as a substitute for the 1 large egg.
Ingredients
• 2 cups (240 g) all-purpose flour [or gluten-free flour]
• ½ cup (42 g) unsweetened cocoa powder, plus more for dusting
• 1 Tablespoon of cornstarch
• 2 teaspoons of ground cinnamon
• ¼ teaspoon of ground black pepper
• 2 teaspoons of Ancho chili powder, optional
• ⅛ teaspoon of kosher salt, optional
• 1 cup (2 full sticks) unsalted butter [or plant-based butter], melted
• 1 large egg, at room temperature (I used a chia egg)
• 1 teaspoon of vanilla extract
• ½ cup (100 g) granulated sugar
• ¼ cup (25 g) powdered sugar
