Lomo Saltado is a classic Peruvian Stir Fry made with beef, red onions, tomatoes, coriander and served with fries and rice. This fusion dish is a cultural blending of Peruvian and Chinese ingredients and techniques. Chinese cuisine is extremely popular throughout Peru. Lima, in particular, has a plethora of Peruvian-Chinese fusion restaurants or “Chifas” as they are known locally.
INGREDIENTS (Serves 4)
600g rump steak, cut in medium-sized chunks
1 tsp cumin
Salt to season
1 red onion, cut in thick slices
2 tomatoes, deseeded and cut in strips
½ bunch coriander, chopped
2 tbsp vegetable oil, to cook
Beef Sauce
½ cup beef stock
3 tbsp soy sauce
1 tbsp red wine vinegar
1 tbsp yellow chilli paste
1 tsp oyster sauce
To serve
1 cup white rice, cooked
½ bag beer battered fries, cooked per packet instructions
Sprinkle of finely chopped coriander
