Poha: 2 cups
Oil: 4-5 tbsp
Mustard seeds: 1/2 tsp
Red chilli whole: 2
Curry patta: 2 sprigs
Onion: 1 large (finely chopped)
Carrot: half (finely chopped)
Beans: 8-10 (finely chopped)
Salt: to taste
Haldi/turmeric: 1/4 tsp
Garam masala: 1/2 tsp
Tomatoes: 2 hybrid + 1 Desi
Coriander leaves : handful
-Start by washing the poha lightly and drain it over a sieve. Let it sit for 15 minutes till you prepare everything else.
-In a large kadai, heat up oil on medium high heat, add the mustard seeds and let them pop.
-Reduce the heat to low and add the red chilli, curry patta and finely chopped onion.
-Sweat the onions till translucent, add in the chopped carrot and beans, toss them around on medium heat. Add the salt and spice powders and mix.
-Quickly add in the chopped tomatoes and green chilli stir everything together. Cover and cook on low heat for 3-4 minutes.
-Add in the soaked Poha and toss it around till everything is mixed cohesively.
-Once mixed, sprinkle some water, turn the heat off and cover the poha for 5 minutes. Open the lid, finish it off with some freshly chopped coriander and serve hot.
-Enjoy with some spicy Bhujiya and a squeeze of lemon.
