How to make Ivan Chai with fireweed!

Fireweed tea is one of my favorite wild teas to make! It can be a little bit of effort, but the result is well worth it!
This tea is better known as Ivan Chai in parts of Europe. It has a lovely, fruity, black tea flavor once fermented and dried.
The process, though time consuming, is pretty simple. Harvest clean, healthy leaves. Wilt them. Bruise vigorously to release aroma and start oxidization. Allow to oxidize and ferment for a few days, until they smell fruity and tea-like instead of vegetal. Dry and store!
I have run into issues with molding during the fermentation in past attempts. It's very important to keep the leaves moved around during the process to prevent too much moisture getting locked into one area and letting contamination grow.
