INGREDIENTS:
1 tbsp ground chia seeds
1 1/2 cups whole wheat flour
2 tsp baking soda
1/2 tsp salt
1 cup pumpkin purée
1 cup unsweetened applesauce
2 egg whites
1/2 cup agave syrup
2 tsp lemon juice
1 tsp orange juice
zest of one large lemon
zest of 1 orange
1 tbsp vanilla extract
1/2 cup dried cranberries
EQUIPMENT:
Large bowl
Medium bowl
2 whisks
Citrus reamer
Zester
Measuring cups
Measuring spoons
Cake pan
INSTRUCTIONS:
1. Preheat oven to 350 degrees
2. Grease your cake pan
3. In a medium bowl, whisk together the dry ingredients (chia seeds, flour, baking soda, salt)
4. In the large bowl, whisk together the pumpkin, applesauce, egg whites, agave, citrus juices, zest and vanilla
5. Gradually whisk the dry ingredients into the wet until just combined
6. Add the cranberries and fold until combined
7. Scoop into pan (don't over-fill. 2/3-3/4 full is plenty)
8. Bake for 30-40 minutes (cake) until a toothpick inserted into the center comes out clean
9. Let cool to just warm and serve.
