🥘 Ingredients / కావలసిన పదార్థాలు
Kakarakaya Fry Pachadi / Bitter Gourd Pickle:
• Bitter gourd – 300 gms (cut and cleaned)
• Water – 75 ml
• Jaggery – 2 ½ tsp
• Salt – ¼ tsp
Tempering:
• Oil – 4–5 tsp
• Mustard seeds – ½ tsp
• Cumin seeds – ½ tsp
• Garlic – 1 full (crushed)
• Dry red chili – 2–3
• Curry leaves – few
• Asafoetida – ¼ tsp
Masala Powder:
• Dry coconut – small piece
• Coriander seeds – 1 ½–5 tsp
• Black gram – 4–5 tsp
• Mustard seeds – 2 tsp
• Fenugreek seeds – ½ tsp
• Cumin seeds – 1 ¼ tsp
• Curry leaves – few
• Salt – 1 ½ tsp
• Turmeric powder – ¼ tsp
• Red chili powder – 3 tsp
Finishing Touch:
• Oil – for deep frying
• Coriander leaves – few
• Lemon juice – 3 tsp
🔥 Preparation Highlights
1. Cook bitter gourd with water, jaggery & salt → cover & cook till soft.
2. Heat oil, add mustard, cumin, garlic, red chili, curry leaves, and asafoetida for tempering.
3. Dry roast all masala ingredients and grind into powder.
4. Deep fry cooked bitter gourd until crisp.
5. Mix the fried kakarakaya with ground masala powder & pour the tempering.
6. Add coriander leaves and lemon juice, mix well.
